To make the ginger juice, grate 4 in (10 cm) young ginger to make 1/2 cup of grated ginger. Mix with2 tablespoons water, then strain the mixture through a fine sieve, pressing with the back of a spoon, to obtain 1/4 cup (60 ml) of ginger juice.

4 teaspoons sake
2 teaspoons sugar
6 teaspoons mirin
4 teaspoons sesame oil
8 oz (250 g) ground chicken meat
3 eggs
5 cups (500 g) freshly cooked Japanese rice (see note)
1 green onion (scallion), finely sliced
